Eating Locally, Eating Seasonally: Twice-Baked Sweet Potatoes PDF Print E-mail

I never had a full appreciation for sweet potatoes until I moved to Virginia. Now, I always have my eye out for a great sweet potato recipe. I especially love them when they are paired with maple syrup. Here is a great one from Bobby Flay's show, Boy Meets Grill. It can be found on the Food Network website:

Twice-Baked Sweet Potatoes

4 large sweet potatoes, scrubbed
1 1/2 cups heavy cream
1 tablespoon chipotle peppers in adobo, pureed
1 stick unsalted butter, softened
1/4 cup creme fraiche
1/2 cup maple syrup, plus 2 tablespoons
Salt and freshly ground pepper
Nonstick cooking spray

Preheat oven to 375 degrees F.
Place potatoes on a baking sheet and bake in the oven until soft, 45 to 50 minutes. Remove the potatoes from the oven and let rest 5 minutes. Slice potatoes in half lengthwise and carefully scoop out the flesh, being careful not to damage the skin. Rice the flesh in a ricer set over a bowl.
Bring the heavy cream and chipotle puree to a simmer over low heat in a small saucepan. Stir the warm cream, butter, creme fraiche and 1/2 cup of the maple syrup into the sweet potato mixture until combined. Season with salt and pepper, to taste. Spray the baking dish with cooking spray. Fill each of the skins with the cream mixture, place back on the baking sheet and bake until golden brown. Remove the potatoes to a platter and drizzle the tops of each with the remaining maple syrup.

The Mini E: Plug-in Mini Cooper Coming! PDF Print E-mail

In 2009, drivers in the Los Angeles and New York areas will be able to lease a car from a fleet of 500 all-electric Mini-Coopers from BMW's Mini division. The car, known as a Mini E, will be officially unveiled to the public at the Los Angeles Auto Show in November, after which BMW will accept lease applications. Leases will then begin early next year.

Free Local Fruit for Schoolchildren - Good for Kids and Local Producers PDF Print E-mail

A new initiative from the European Commission proposes a multi-million-pound fund to support free local, fresh fruit in schools. This initiative would be part of the Commission’s efforts to improve health and nutrition, but it has the potential to not just positively impact the health of the children, but also to positively impact the local agriculture industries. The plan it will be voted on in full parliament in November, and should be in place in time for the 2009-10 school year. What a wonderful plan!
